Saba is obtained from grape must which is cooked on a low flame in a copper kettle for at least 16 hours in order to reduce the volume by 2/3. Saba is ideal matched with matured Pecorino cheese, barely warm on a sheep ricotta cheese or some drops on blue cheeses.
