Chris & Aaron is like a trip tale into the mind of a creative soul

Produced in the Piedmont region of Italy, this variety of cheese is a hand-made in the manner of an artisan cheese. Made from a combination of cow and goat's milk blended with bits of black truffles, Bianco Sottobosco Cheese is aged in mountain caves for 40 to 60 days before being sold in markets.

Region: Piedmont. Cow and goat milk.

Tasting notes: a semi-hard crumbly-textured cheese with a naturally developed rind, blooming with grey and white moulds. The pate is studded with chopped black truffles.

Serving suggestions: this is perfect eaten on its own, or crumbled over pasta, risotto or salads. It can be served with fruit, dark breads, and robust wines.
