Type soil: the soil is poor and rocky, the temperature is ideal in summer (partly due to the micro-climate created by the local wind, the Ora del Garda): vines here still co-exist alongside olive groves.The valley is more open here and the excellent sun exposure allows the grapes to ripen to perfection.
Colour: golden with subtle highlights.
Aroma: aromas of stewed ripe fruit, particularly quince, but also a discreet note of honey. These are followed by roasted notes and cocoa, which give way to flavours of star anise and nutmeg.
Tasting notes: full-bodied attack. Powerful but well-balanced, with persistent flavour. Mineral finish with touches of lemon revealing a pleasing bitterness.
Serving suggestions: all types of risotto, especially mushrooms or truffle risotto; venison; old Comté or Swiss Gruyère.
