Wine type: champagne - Bollinger Grand Annèe Rosé.
Vintage and alcohol content: 2012 - 12°
Region: Aÿ, Avenay, Tauxières, Louvois et Verzenay. France.
Grape/blend: 72% Pinot Noir, 28% Chardonnay 13 crus (95% Grands crus and 5% Premier crus. 5% red Côte aux Enfants wine).
Type soil: the soil is poor and rocky, the temperature is ideal in summer (partly due to the micro-climate created by the local wind, the Ora del Garda): vines here still co-exist alongside olive groves. The valley is more open here and the excellent sun exposure allows the grapes to ripen to perfection.
Colour: salmon coloured with orange hues.
Aroma: aromas of fresh bread, gingerbread and cinnamon with woody and floral notes.
Tasting notes: range blossom and citrus zest with gentle notes of redcurrant.
Serving suggestions: duck breast, quail, pigeon or guinea fowl. Venison sauce Grand Veneur. Exotic or oriental cuisine. Rhubarb and red berry crumble.
