Type soil: the soil is poor and rocky, the temperature is ideal in summer (partly due to the micro-climate created by the local wind, the Ora del Garda): vines here still co-exist alongside olive groves.The valley is more open here and the excellent sun exposure allows the grapes to ripen to perfection.
Colour: bright, pale yellow with a white gold hue, very fine and abundant bubbles.
Aroma: subtle and inviting, it is focused and features delicate aromas of white flowers, citrus, clear honey and frangible.
Tasting notes: featuring both balance and volume, it shows great coherence with the aromatic palette found on the nose, with notes of lemon zest and white flowers. Its silky texture gives it an aerial quality, that lingers in a finely mineral finish.
Serving suggestions: its great aromatic finesse makes Blanc de Blancs 2010 a fantastic epicurean aperitif, but it can also pair perfectly with a sea scallop carpaccio with finger lime and basil, or, in a more classic fashion, with turbot in a white butter sauce or vanilla-infused lobster.
